— Bread: Cold breaks down its starches but freezing can keep it fresh longer.
— Cucumbers and tomatoes: These lose flavor in the fridge. To store, dip in cold water, then keep in a cool, dry place.
— Potatoes and winter squash: Cold breaks down the starches in these, too.
— Garlic and ginger: Store on the counter or in a cupboard to maintain flavor.
— Fruit (except bananas, which shouldn’t be refrigerated): Ripen on the counter, then move to the low-humidity crisper drawer, covered loosely in plastic wrap or airtight containers.
